Pina Refresher Mocktail

If you follow me on instagram, you probably know I spend a good chunk of time (any I can really) in St. Croix USVI where my parents own my mom's childhood home. Yes, it's the carribean, but yes, we are homeowners and with that, comes responsibility. 

This trip is dedicated to the exterior of the home, sanding and scraping will be my to-dos during the first part of the trip. It's HOT here, I mean 89 with a dew point of 72, yeah like 80% or higher humidity. So we work in the mornings after our walk. By the time lunch comes around and the heat of the day, a drink is in order. We keep things light on the calories but try to remember we are on vacation, so a pina colada mocktail is a favorite post-lunch delight.

PINA REFRESHER

makes two drinks


INGREDIENTS

  • ice

  • blender

  • 1 cup coconut water (flavor if you want)

  • 1/4 cup pineapple water

INSTRUCTIONS

Start by adding about four cups of ice, add your pineapple juice and coconut juice and blend. This is simple stuff folks, goya is the best pineapple juice, and coconut water with tropical fruit is what we used here. The key to the right blender drinks is having sweet to counteract the weird ice taste you can't avoid, and adding enough liquid. You want to pour in your liquid after the ice and have it go up 3/4 of the way up to the top of the ice.
