Cheat Night Pasta

We all know those nights, when we are trying to be good and remove the "easy" meals from the house. For me, this is one of my favorite ways of getting that "cheat night" flavor with a bit of healthy whole grain pasta and a bit of melty cheese. It takes so little time and effort that you can get that fresh but indulgent meal in minutes.

 

Whole Grain Pasta with Sage Butter and Goat Cheese

Makes one bowl of pasta

Ingredients

  • 3/4 cup cooked whole wheat pasta 
  • 1tbs butter
  • 10 sage leaves
  • juice of half a lemon
  • 1 oz goat cheese
    • lightly packed cup of baby arugula
    • salt + pepper

 

Instructions

Start by prepping your ingredients, especially the pasta if you don't have any cooked that has been batch prepped. Take a saute pan and put on medium heat on the stove. Add the butter, and then once melted, add the sage leaves. Add a sprinkle of salt. Let the sage leaves fry in the butter. Just as the butter starts to turn brown add the lemon juice. Mix to integrate and add in your pasta over top. Add a tablespoon of broth or water if you need a little more liquid. Get the pasta nice and hot if your pasta is not warm. Add the goat cheese and let melt while you are stirring the pan for a few moments. Lastly add the arugula and a few grinds of fresh black pepper and serve right away. Indulge!
